Grilled Salmon & Vegetables

Salmon fish fillets grilled with sweet potatoes and asparagus.




Marinate the salmon fillets with the soya sauce and maple syrup. Set aside.


Cook the sweet potatoes in the microwave oven with the Micro Power function on 1000W (High) for 5 minutes. Cook until slightly tender. Let cool, then cut diagonally across into slices. Set aside.


Remove the salmon fillets from the marinade. Grill in the microwave oven with Grill 2 (Medium) for 10 minutes (5 minutes on each side). Grill until opaque in the centre. Remove and keep warm.


Add the sliced sweet potatoes and onions and grill at 200°C for about 5 minutes. Turn the sliced sweet potatoes and add the green asparagus. Grill for another 5 minutes, turning the asparagus frequently.


Sprinkle the grilled salmon fillets and vegetables with salt and black pepper to taste. Reduce the rest of the marinade in a pot for 1 minute until thickened, and pour over the grilled salmon fillets.

2 onions sliced into 1 cm thick wedges
